PREP NOTES
These healthy muffins are the perfect snack for on the go rich in Omega-3's, fiber, antioxidants, and good fats... all very good for the brain! I got this recipe from my aunt years ago, I hope you like it too.
INGREDIENTS
- 3 ripe bananas
- 1 cup walnuts (pieces)
- 3 eggs
- 1 cup ground flax seed
- 3 tbsp coconut flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/8 tsp ground sea salt
- 1 tsp cinnamon
- 1/4 cup honey
DIRECTIONS
- Preheat oven to 350 degrees.
- Blitz all ingredients in blender (minus the walnuts) until smooth. Then hand mix in the walnuts & pour evenly into a lined muffin tin.
- Bake until toothpick/fork comes out clean after being inserted approx 25mins later.
NOTES
- I usually add about 1/2 of the honey listed in this recipe & it's still wonderful, but I kept the above just as my Aunt gave it to me.
- On occasion, I will also add about 2 tbsp of Cacao Nibs for a bit of chocolate.
