PREP NOTES
This is an excellent way to start your day, full of proteins, fats & vegetable carbs. Everything your body & brain need to start the day off right & no blood sugar crashes!
INGREDIENTS
- 3 cups broccoli, steamed & cut up
- 12 large eggs
- 1/2 cup heavy cream
- 2 cups cheddar cheese
- a few cherry tomatoes diced small
- 2 lbs no sugar bacon, cooked & cut up
- 1 tbsp ground flax seed
- dash of ground sea salt, pepper & garlic
- Avocado oil (spray)
DIRECTIONS
- Preheat oven to 375 degrees F
- Wisk together the eggs, heavy cream, half the cheddar cheese, salt, garlic & pepper in large bowl.
- Spray avocado oil into 9 x 13 casserole dish.
- Mix in cut bacon, tomatoes & broccoli into egg mixture.
- Add egg mixture to dish & sprinkle remaining cheddar cheese on top.
- Bake for approx. 30 minutes until eggs are set & cheese is melted.
NOTES
- I buy block cheese & shred it myself to avoid all the unnecessary chemicals they add to prevent caking.
- When I buy cheddar, I buy white cheddar to avoid the unnecessary chemicals just to make my cheese orange.
- Top with Franks Red Hot or salsa if you like.
