easy breakfast casserole

PREP NOTES

This is an excellent way to start your day, full of proteins, fats & vegetable carbs.  Everything your body & brain need to start the day off right & no blood sugar crashes!


INGREDIENTS

  • 3 cups broccoli, steamed & cut up
  • 12 large eggs
  • 1/2 cup heavy cream
  • 2 cups cheddar cheese 
  • a few cherry tomatoes diced small
  • 2 lbs no sugar bacon, cooked & cut up
  • 1 tbsp ground flax seed
  • dash of ground sea salt, pepper & garlic
  • Avocado oil (spray)


DIRECTIONS

  1. Preheat oven to 375 degrees F
  2. Wisk together the eggs, heavy cream, half the cheddar cheese, salt, garlic & pepper in large bowl.
  3. Spray avocado oil into 9 x 13 casserole dish. 
  4. Mix in cut bacon, tomatoes & broccoli into egg mixture.
  5. Add egg mixture to dish & sprinkle remaining cheddar cheese on top.
  6. Bake for approx. 30 minutes until eggs are set & cheese is melted.


NOTES

  1. I buy block cheese & shred it myself to avoid all the unnecessary chemicals they add to prevent caking.  
  2. When I buy cheddar, I buy white cheddar to avoid the unnecessary chemicals just to make my cheese orange.  
  3. Top with Franks Red Hot or salsa if you like.
