salmon salad wrap

wild salmon salad (wraps)

PREP NOTES

Salmon is an excellent way to get the much needed Omega 3's that are needed for the brain & body to function optimally. This can be made without the tortillas to keep your blood sugars even lower.


INGREDIENTS

  • 12 oz cooked wild caught salmon
  • 4 tbsp avocado oil mayo
  • 4-6 celery stalks diced small
  • 1/2 red onion, diced
  • a few cherry tomatoes diced small
  • 8 tortillas by Siete Foods,  OR butter lettuce leaves
  • 1 tbsp ground flax seed
  • dash of ground sea salt


DIRECTIONS

  1. Combine the salmon, mayo, celery, tomatoes, salt & red onion in a medium sized bowl.
  2. Add salmon mixture to a salad or use it as a filling in lettuce wraps or the tortillas.
  3. Add mixture to tortillas or lettuce wraps right before eating to prevent them from getting soggy.


NOTES

  1. Siete Foods tortillas can be found in the refrigerated section of the grocery store.  I like the Cassava tortillas but the Almond tortillas are also excellent. 
  2. Store extra salmon salad in glass container in the refrigerator. 
  3. Add spicy radish sprouts or broccoli sprouts to the top for extra flavor & antioxidants.
