Delicious broccoli salad

broccoli salad

PREP NOTES

Full of healthy fats & lots of cruciferous greens, your body & brain will thank you.  Perfect for summer but great for any time of the year, it makes the perfect side dish for even the pickiest of eaters.


INGREDIENTS

  • 1 tbsp apple cider vinegar
  • 1/2 cup cold pressed mayonnaise (I use Primal Avocado Oil Mayo)
  • 1/2 tsp black pepper (to taste)
  • 1 tsp ground sea salt (to taste)
  • 6 cup broccoli- cut into bite size pieces
  • 2 cups red or black grapes sliced in half
  • 6 slices of bacon- cooked & diced
  • 1/4 cup slivered almonds
  • 1/4 cup red onion- diced


DIRECTIONS

  1. In large mixing bowl, mix together broccoli, mayo & apple cider vinegar.
  2. Mix in the slivered almonds, bacon, grapes, onion, salt & pepper.



NOTES

  1. I like to add crushed walnuts instead of slivered almonds & sometimes depending on my company, I do not add nuts. 
  2. Feel free to add mixed greens & tomatoes too!
  3. Another brand of mayonnaise I like is Chosen Avocado Oil Mayo.
