Himalayan Tartary buckwheat pancakes

PREP NOTES

This is something we love to make as a special treat. It's got protein, omega 3's, prebiotics & antioxidants.   In this Himalayan Tartary Buckwheat there's over 100 immune active nutrients!


INGREDIENTS

  • 2 large eggs 
  • 1 cup Himalayan Tartary Buckwheat Super Nutrition Flour
  • 1/2 cup almond flour 
  • 2 tsp pure vanilla extract
  • 1 1/2 cup unsweetened almond milk
  • 1 tbsp ground flax seed
  • 1/2 cup melted coconut oil
  • 2 tsp ground cinnamon
  • 1 pint fresh blueberries (for blueberry sauce over pancakes)
  • Avocado oil (spray)


DIRECTIONS

  1. In large mixing bowl, beat together the eggs, almond milk, vanilla & coconut oil. 
  2. Mix in the almond flour, ground flax seed, Himalayan Tartary Buckwheat & cinnamon. 
  3. Spray avocado oil into large stainless steel pan once it's hot. 
  4. Add batter to the pan & cook approx 2 minutes on each side. 
  5. Make blueberry sauce by simmering blueberries in saucepan with 2 tbsp water for about 10 minutes before serving. 
  6. Add pancakes to platter & add walnuts, bananas, strawberries as garnish & drizzle blueberry sauce to taste.


NOTES

  1. I get my Himalayan Tartary Buckwheat from Big Bold Health (https://bigboldhealth.com/product/himalayan-tartary-buckwheat-super-nutrition-flour-organic/).
  2. I like to add crushed walnuts to my pancakes.  You can add this to the mixture itself or in the individual pancakes as they are cooking for a personalized approach. 
  3. These pancakes would be good paired with full fat (heavy cream) whipping cream also.  Also, the fats will help blunt any possible blood sugar spikes. 
  4. I use MALK brand of almond milk (https://malkorganics.com/products/) .
